Mama's Christmas Peanut Brittle

Mama made this candy every Christmas, and when I married she gave me her recipe. It has been a favorite Christmas candy for our family for 60 years. Enjoy! Ingredients: 2 cups sugar 1/2 cup light corn syrup 2 cups unsalted raw peanuts 1 TBLS butter 1/4 tsp baking soda Directions: 1--Combine sugar, corn syrup and 1 cup water and cook over low heat until 238 degrees or soft ball.

2--Add peanuts and stir frequently. Cook until 300 degrees or hard crack.

3--Remove from heat and add butter and baking soda, stirring just enough to mix. Pour onto buttered sheet of foil. Cool. Break into pieces. Yields 1-1/2 pounds of brittle.

NOTE: My youngest son doesn't like peanut brittle but he loves pecan brittle. So each Christmas I substitute pecans for the peanuts and make a batch of Pecan Brittle for him.
