Banana Pudding, The Way Mama Fixed it.

Last week I made a Banana Pudding for dessert for some friends who came for dinner. If you go to a pot luck dinner now days and someone brings Banana Pudding, it usually is made from a box of Jello Vanilla Pudding Mix. And it is good, but as Allen Jackson said in his song Where I Come From..... "It aint like Mama fixed it." When Mama "fixed it", it came from scratch over a double boiler and it was the best!! And when I make it, I pull out the double boiler and I make it the same way. I even put it in the same "Banana Pudding Bowl" that she used to make it in. So if you want a delicious banana pudding recipe "like Mama fixed it", here you go. Enjoy!

PUDDING INGREDIENTS: 1/2 Cup sugar 1/3 Cup flour Dash of salt 3 egg yolks 2 Cups milk 1/2 teaspoon vanilla Vanilla wafers 5 Bananas TOPPING INGREDIENTS: 3 egg whites 1/4 cup sugar DIRECTIONS: 1--PREHEAT oven to 350 degrees. 2--MIX 1/2 cup sugar, flour, salt, 3 egg yolks, and milk in top of double boiler. Cook, uncovered, over boiling water for 10 minutes or until thickened, stirring constantly. Remove from heat and stir in vanilla. 3--SPREAD small amount of pudding in your oven safe serving bowl (baking dish). Cover with layer of vanilla wafers and then a layer of two and a half of the sliced bananas. Pour half of the remaining pudding over bananas and spread to cover. Repeat another layer of wafers and the other two and a half sliced bananas. Cover with the rest of the pudding and spread to cover. 4--MIX 1/4 cup sugar with egg whites and beat until stiff peaks. Spread topping over pudding and make peaks with spoon. 5--LAYER vanilla wafers along the side of your baking dish. Crush two vanilla wafers and sprinkle on top of topping. 6--BAKE in 350 degree oven for 10 minutes. Remove from oven and let cook for about 30 minutes before you cover and refrigerate.
