Easy Peach Cobbler

Summer in the South means vacation, camping, swimming, baseball, going to the lake, homemade ice cream, and fresh pies. But making pies takes a lot of time in the kitchen rolling out crusts and trying to get them in the pie plate without tearing them; making lattice tops, and on and on and on. You see more cobblers than pies in the South because cobblers are much easier to make, The crusts and toppings are very simple taking far less time in the kitchen. This 6 ingredient peach cobbler takes 10 minutes to put together and yields 6 servings. This delicious and simple recipe can't get any easier or any more delicious. And no....you don't peel the peaches. Southern cooks know that peach peel is what gives the cobbler that delicious peach flavor. I am one of those Southern cooks who saves the peach peels, when canning peaches, to make Peach Peel Fried Pie Filling. Ingredients: 1-3/4 pounds fresh peaches 1/2 cup (4 oz) salted butter 1 cup self-rising flour 1 cup granulated sugar 1 cup whole milk 1 teaspoon vanilla extract Directions: 1--Preheat oven to 350 degrees. Gently rub the peaches under running water to remove fuzz, and slice peaches. (You will have about 4 cups.) 2--Place butter in an 11" x 7" baking dish; place dish in oven until butter melts. 3--Stir together flour, sugar, milk, and vanilla in a bowl, and pour onto melted butter. (DO NOT STIR) 4--Spoon peaches over mixture. (DO NOT STIR) 5--Bake in preheated oven until brown and bubbly. 45-50 minutes
