Cucumber Sandwiches

Refreshing cucumber sandwiches originated as a British snack with tea, but in the U.S., and especially in the South, cucumber sandwiches are a summer treat! I have two rows of cucumbers in my garden this year and I just can't wait to taste those delicious fresh cucumbers and make some cucumber sandwiches.

This easy herbed cream cheese spread makes the perfect refreshing sandwiches for summer. Enjoy! INGREDIENTS: *8 oz cream cheese, softened *3 tablespoons mayonnaise or Miracle Whip *2 teaspoons chopped fresh dill *1 teaspoon chopped fresh chives *1/4 teaspoon garlic powder *salt & pepper to taste *1 long thinly sliced cucumber *1 loaf sliced bread, crusts removed DIRECTIONS: 1--With a hand mixer mix cream cheese and mayonnaise in a small bowl until smooth. Stir in herbs, garlic powder and salt and pepper to taste.
2--Thinly slice cucumbers. Spread cream cheese spread over both slices of bread. Layer cucumber slices between slices of bread.

3--Top with remaining bread slice and cut each sandwich into 3 pieces. 4--Serve immediately or cover and store up to 24 hours. With the spread on each slice of bread, the sandwiches will not get soggy.

Yield: 30 tea sandwiches. Serving size 2 tea sandwiches. Calories per serving: 104 calories.
