Dorito Rotel Mexican Chicken Casserole

When the boys were little, this casserole was one of their favorite meals. Haven't made it in a while, so I pulled out the recipe last week and made it again for the first time in about 25 years. It was delicious! Why did I stop making this awesome casserole??? Don't worry about what to do with the leftovers. There won't be any. Enjoy! INGREDIENTS: 4 chicken breasts (cooked and shredded) 1 small chopped onion 1/2 cup butter 1 (10-3/4 oz) can cream of mushroom soup 1 (10-3/4 oz) can cream of chicken soup 1 (11 oz) can Rotel 1 (12 oz) bag Doritos 3/4 lb cubed Velveeta cheese DIRECTIONS: 1--Saute onions in butter. Add soups and Rotel. Add cubed Velveeta and stir and simmer until it melts.

2--Add shredded chicken to cheesy mixture and stir. 3--Crumble Doritos and cover bottom of casserole dish. Save the remainder for the top. 4--Pour and spread chicken mixture over Dorittos and top with remaining crushed Doritos. 5--Bake at 350 degrees for 30 minutes. NOTE: Some people use Nacho Cheese Doritos in this recipe but it is much better with just the plain original Doritos.
