Living the Country Life

Have I mentioned that I love living the country life? I think I have maybe a million times. But it's true. Right now I am having so much fun canning my homegrown vegetables out of my garden. I know that may sound terribly boring to many people, but I absolutely love raising and canning my own vegetables. Growing up on a cotton farm in the south, everything we ate....we raised. Garden vegetables, apples, cherries, plums, grapes, blackberries, potatoes, popcorn, peanuts, eggs, milk, chickens, pigs......you name it. If we ate it...we raised it. We are pickle eaters at our house and this year I planted two rows of cucumbers.

As you can see from the picture, I have my cucumbers planted next to wire panels and I trained the vines to grow up the panels. Makes it much easier to pick your produce. So this week, I have been canning cucumbers.

The two crocks are full of cucumber slices soaking in canning lime to make "Lime Sweet Pickles".

The other recipe is a "Hot Kosher Dill" recipe which was my mother's recipe.

In each jar, it contains one head of my homegrown dill from my garden, a garlic clove, and a red hot pepper. The hot pepper gives the pickles a spicy hot taste which my family loves!! Want the recipe? Check out our "Wednesday Recipe Blog" next Wednesday on the 4th of July for the recipe.
